DRY INGREDIENTS

  • ½1 cup Oat Flour
  • ¾ cup Coconut Sugar or Date sugar
  • tsp sea salt
  • 1 tsp baking soda

WET INGREDIENTS

  • 1 cup plant base milk
  • 1 tsp orange or lemon juice
  • 1 tsp lemonorange zest
  • cup room temperature coconut oil

FROSTING

  • ¾ cup coconut cream
  • ¼ cup syrup maple
  • 1 spoon room temperature coconut oil
  • ¼ cup frozen mangofrozen berries

Make the Muffins:

  1. Preheat your oven to 375°F or 190°C.

  2. In a mixing bowl, combine the dry ingredients: oat flour; sugar, baking soda and salt

  3. Stir in the milk, lemon juice ,coconut oil, orange zest

  4. Fold the wet ingredients in the dry ingredients.

  5. Evenly spoon the mixture into the 6 muffin cups

  6. Bake for 10-15 minutes or until golden brown. Let cool

  7. Let cool completely on a cooling rack. In the meantime, prepare frosting 

HOW TO MAKE COCONUT CREAM FROSTING

  1. Make sure your coconut cream can is chilled 24 hrs and you have coconut cream not milk. .

  2. Once chilled pour the hardened cream mixture into a bowl

  3. Add the maple syrup and the coconut oil until fluffy and smooth
